Restaurant Air Conditioning Cape Town

Home Restaurant Air Conditioning

Restaurant air conditioning in Cape Town is really two systems that have to work together: cooling for the dining room, and extraction for the kitchen. Get the second one wrong and the first one cannot succeed, because a kitchen extracting hard with nowhere to draw replacement air pulls it from the dining room, the front door and anywhere else it can.

Air Balance

A commercial kitchen canopy moves a large volume of air out of the building. That air has to be replaced. If no make-up air is supplied deliberately, it comes in through the dining room and the entrance — unconditioned, uncontrolled, and taking your cooling with it.

  • Extraction volume matched to the canopy and the appliances beneath it.
  • Make-up air supplied at a rate close to what is extracted.
  • Kitchen kept slightly negative relative to the dining room so smells stay in the kitchen.
  • Dining room kept slightly positive relative to outside so the entrance does not become the air inlet.

If the dining room is uncomfortable whenever the kitchen is busy, the problem is usually air balance rather than cooling capacity. Adding a bigger aircon to an unbalanced restaurant is expensive and does not fix it.

Dining Room

Cassettes are the norm. Considerations specific to hospitality:

  • No unit blowing directly onto a table. Cold air on the back of a diner's neck is a complaint every time.
  • Noise low enough to hold a conversation under.
  • Occupancy load, which is substantial — sixty covers is a large heat source.
  • Separate zones for bar, dining and function areas that fill at different times.
  • Evening bias — the building has been absorbing heat all day and then fills up after dark.

Kitchen Cooling

Kitchens are extracted rather than air conditioned in most cases, because cooling air that is immediately extracted is money out of the canopy. Where the kitchen is genuinely unworkable, spot cooling directed at the working positions is the usual approach, with units specified to tolerate grease-laden air.

Grease and Maintenance

Airborne grease is what makes restaurant HVAC different. It coats coils and blower wheels far faster than dust does, and it carries into the ductwork. Canopy filters need cleaning on a short cycle, extract ducting needs periodic deep cleaning, and dining room units foul quicker than the same unit in an office. Quarterly maintenance is the practical minimum.

Frequently Asked Questions

Why is my restaurant dining room hot when the kitchen is busy?

Almost always air balance. The kitchen canopy extracts hard, and if make-up air is not supplied deliberately it is pulled through the dining room and the front door, bringing outside air with it.

Should a commercial kitchen be air conditioned?

Usually not in the general sense, because the canopy extracts the air you would be paying to cool. Spot cooling directed at the working positions is the normal approach where conditions warrant it.

How much does restaurant air conditioning cost in Cape Town?

A dining room with two cassettes commonly runs R60,000 to R105,000. Kitchen extraction is a separate and highly variable scope, typically R45,000 to R180,000 depending on the canopy and the duct route.

How often should restaurant aircon be serviced?

Quarterly at minimum for the dining room units, and canopy filters far more often than that. Airborne grease fouls coils and blower wheels much faster than dust does.

Do I need approval for kitchen extraction?

Commercial kitchen extraction is subject to health, fire and building requirements, and discharge position is often a planning and neighbour issue. Involve a contractor experienced in commercial kitchens early rather than after installation.
